my brother recently got married to a girl named holly.  it turned out to be a great time filled with family, friends, dancing, and laughter.

eggplant pizza

tonight's dinner was amazing.  in my garden i have summer squash and eggplant (and tons of others) but wanted to create a delicious pizza.

*note: the first time i used a pizza stone it didn't turn out well... however with research i came to discover it must be preheated before actually cooking the pizza on it.  this time around was amazing.

ingredients:

store bought whole wheat dough

roasted eggplant

sauted spinach, summer squash, garlic, and red onion

canned diced tomatoes (for the sauce)

fresh roma tomatoes

fresh oregano and chives

mozzarella cheese
