celebration for (HOLLY)

My brother recently got married to a girl name Holly.



And it is her birthday today!  

so we threw a little celebration for her over the weekend.  it was a lot of fun to spend time with family and friends.  we enjoyed great appetizers and drinks, the conversations with others were so wonderful, and most importantly we all were there for one person, Holly.  she is a wonderful person and i have been so lucky to have her join my family!

quick trip



went on a short trip to long beach, wa this weekend.  it was fun.  the weather turned out fairly decent, we even got to walk on the beach for a short minute.  sometimes i think to myself, why drive so far for a short trip, however, sometimes it feels good to get away and enjoy good company.  the drive, games, the conversation, and a new scene can be reviving.  it was a perfect way to end my spring break.

so it's spring break.  as a teacher i should be able to enjoy the time away from the stressors of work for a week right?

well why am i stuck grading these research papers?


I feel like this picture explains my work load currently.  I feel as though even though 
I am spending a lot of time reading this papers the pile is not getting any smaller!  
I have only a few days left to read them, make changes, 
and keep my SANITY!!!

BBQ Chicken Pizza


This last weekend Steve and I made delicious BBQ Chicken Pizza.  It turned out so good and I could have eaten the whole thing!!!  Even though homemade pizza is a long process... it is so worth it!


Store bought or homemade pizza dough
2 thawed chicken breasts, cubed
Mozzarella Cheese
Cilantro
BBQ Sauce
Tomatoes, Diced
Corn Meal

Preheat oven to 450 degrees.  Place pizza stone in the oven about 30-45 minutes before you bake the pizza.  Pizza stones work best when they have been pre-heated.  Saute chicken in a skillet over medium heat.  Flour a large clear surface.  Also flour the pizza dough.  Roll out pizza to desired size (be sure the center is not to thin or it will tear).  Remove pizza stone from oven, sprinkle corn meal on the pizza stone, and transfer dough to the stone.  Spread a layer of BBQ sauce down, top with cilantro, and spread chicken evenly.  Add a thin layer of mozzarella cheese.  Spread the tomatoes over the cheese and add another layer of mozzarella cheese.  Drizzle BBQ sauce over the pizza and place in the oven.  Bake for 12-16 minutes.  Remove and slice.

I could spend hours with these two ladies.  They are two of the most "Real" ladies.  If you haven't ever watched their show, I highly recommend it.  You will be in tears (laughing so hard) after watching them for just a short hour!

cakes, waffles, donuts, and pastries

portland has some of the best breakfast places and i often times forget how good they are.

ever been to slappy cakes?
best place for pancakes, made your way.  
actually you cook them yourself.
a pitcher of batter is brought to your table,
a griddle is hot and ready, pour and cook.
plus, add your own mix ins.

what about waffles?
they come sweet or savory.
who doesn't like a fresh, warm waffle to perfection.

donuts... the first place i think of is voodoo.

Cucumber Tomato Tea Sandwiches

It's late in the day... I normally post early but have been super busy.  However, I have a wonderful recipe for tea sandwiches.  I like to try new things in the kitchen and these are amazing.....  check them out.

1 loaf good quality white and/or wheat bread ( I like both for pretty appearance)
1 8oz bar of cream cheese, room temperature
1 Jar Toby's Feta Dressing (found in the refrigerated health section at selected markets)
1 cucumber, sliced, 1/4"
2 tomatoes, sliced, 1/4"

Mix cream cheese and Toby's Dressing to reach desired consistency (it should be thick but spreadable).  Spread a good amount of mixture on one slice of white bread.  Add cucumber and tomato.  Spread cream cheese dressing mixture onto slice of wheat bread (or white) and put together the two pieces of bread.  Cut off the crust.  Cut the sandwiches in half, creating mini triangles.  Repeat.  After completely all the sandwiches, until ready to serve put damp paper towels over the sandwich tray to prevent dryness.  Serve.
